Delicious Recipe Time
Hi! I'll admit that life in the Walker household has been a bit crazy lately. I will get back to my weekly Wednesday blog posting next Wednesday..I promise! For this week I'm just posting two simple recipes. I've served these over the past month or so and they have been requested several times so I will share. Sorry I don't have any pictures of the finished product!
Tostado Meat Dip
1 lb. hamburger
Onion, chopped - to taste
8 oz. tomato sauce
Oregano to taste
1 tsp. sugar
8 oz. cream cheese
1/3 C. Parmesan cheese
1. Brown hamburger and onion - drain
2. Add tomato sauce, oregano, sugar and mix
3. Add cream cheese and Parmesan cheese - let simmer until all is melted
4. Keep warm in crock pot or serve off of stove (that's what we do!) Dip your Tortilla chips into the dip and enjoy!
Tip: Double or Triple for large crowd. Save extra in refrigerator - keeps well!
Dad's Firehouse Spaghetti Sauce
My dad learned this recipe when he worked on the Chicago Fire Department.
Very tasty - perfect blend of spices!
Spaghetti sauce:
1 pound ground beef
1 pound ground Italian sausage (can also use Turkey Italian sausage or sausage in the casings)
1 large can diced tomatoes
2 12 oz cans tomato sauce (I buy in bulk from Sams and divide and freeze what I do not use. Saves a lot of money!)
1 small can of tomato paste
Various spices listed below
1. Brown the meat in a large pan adding the following seasonings: Salt, Pepper, Crushed Red Pepper, Thyme, Basil, Rosemary, Oregano, Fennel Seed (just sprinkle a light layer of each over the meat as it is browning)
2. Drain the meat, add the tomatoes and sauces
3. Add five medium sized bay leaves and 2 1/2 to 3 tablespoons of sugar (this takes the bitterness out of the tomatoes)
4. Slowly bring to a boil, stir frequently so it does not burn. The longer it simmers the better it tastes!
Tip: I've made this for twenty people and actually made the sauce the day before and let sit overnight in my fridge. The flavor really soaked in - very tasty! This sauce also freezes very well!
